Two centuries ago, Gauchos in the southern regions of Brazil gathered around open flames to slow-roast meats over glowing coals. It was a daily ritual that nourished the body and brought people together. Over time, benches replaced bare ground, firepits became brick ovens, and the cuts of meat grew more refined. The Churrascaria was born.
